Two continents, two generations, two traditions, a crisis turned to opportunity and one great friendship lie at the heart of Fynbos Revolution
Susanne Schneider, a German-born hospitality veteran with Michelin-star experience, first met the self-starting young South African Ashlin Bantom in 2015, when he applied for an assistant position at her western Cape restaurant. Their connection was instant and in the time that followed, Ashlin rose from assistant to sommelier, and a close friendship developed.
Five years after they’d met, Covid struck. With restaurants and jobs decimated, fresh inspiration was desperately needed, and the two friends found that inspiration together: Why not combine European tradition and new-wave cocktail styles with their shared love of South Africa and South African fynbos?
